Mono- and diglycerides of fatty acids (E471) refers to a naturally occurring class of food additive composed of diglycerides and monoglycerides which is used as an emulsifier. After the addition, the components of the ice cream can be mixed uniformly, the structure is fine and smooth, the expansion is moderate, the mouth melts when tasting, avoids ice crystal formation, and improves the shape retention and storage stability. The emulsifier Mono and diglycerides of fatty acids is equivalent to sodium alginate and pectin, and the effect is better when use in combination. The addition amount is about 0.5% of the total weight of ice cream raw materials.
