Propylene Glycol Alginate (PGA) is a polysaccharide biopolymer synthesized by esterification of alginic acid extracted from brown algae. It has excellent emulsification, thickening, swelling, acid resistance and stability. , Japan, South Korea, Russia and other countries and regions can be widely used as food additives in various foods, with mature use methods and standard requirements; my country approved its use as a food additive in 1988. Now, as a new type of emulsion stabilizer, PGA has been widely used in the production of yogurt and acidic milk beverages .
