Alginic acid propylene glycol alginate PGA
PGA is a specially prepared food grade propylene glycol alginate derived from seaweed. PGA possesses a unique combination of hydrophilic and hydrophobic portions which concentrate on the surface the walls of bubbles in beer. The molecules reduce the surface tension on the bubbles surface stabilizing the foam structure. As well as improving the head of the finished beer, PGA improves the amount of foam clinging to the glass and protects the beer against contaminates which kill the head.
