Sodium carboxymethyl cellulose (CMC) is widely used in drinks, acidic milk drinks, fruit juice, instant solid drinks, backery, ice cream, frozen pasta, flavoring. Sodium CMC has good use as thickening agent, stabilizing agent, emulsifying agent, suspension agent, dispersing.
1. In beverage
The sodium CMC can prevent protein sediment and fat come-up in yogurt beverage because of its stability of anti-acid, high temperature resistance, salt tolerance.
And the sodium CMC can make fruit pulp and fiber distributed evenly without sediment in the fruit juice, vegetable juice and solid drinks.
2. In ice cream
Keep cream mixture evenly and stabilized, improve the ice cream melting resistance and avoid of ice crystals, ensuring the ice cream is good mouth feeling and smooth.
3. In frozen pasta
The sodium CMC can improve the dough strength and water retention, making the frozen pasta surface smooth and without any cracking. And the shelf life can be extended.
4. In bakery
