Propylene glycol alginate PGA is a kind of new type of food additive, manufactured from alginic acid extracted from natural seaweed through intensive processing. It is white or light yellow powder, flavorless or a little fragrance. It is soluble in water and form gelling solution. It is insoluble in organic solvent ethanol.
Besides its thickening property, PGA has function of surface active agent, used as emulsifier and bubble stabilizer. It has stabilizing function for greasy colloid and it is acid resistant. Because PGA is nonionic compound, it is stable for some metal ion, which can not make solidification and separate out.

It acts as bubble stabilizer in beer, which makes bubble whiter and more exquisite and durable. It acts as acid resistance, emulsifier and dispersant in fruit drinks, which makes drinks no sediment, no layers and stabilizes oil elements. It acts as modifier in flour, noodles and instant foodstuff, as well as in ketchup, meat sauce, soy sauce, emulsifying essence, syrup and icing.
