Nisin food additive
CAS NO.: 1414-45-5
Food additive E number: E234
Nisin is a safe and efficient natural food preservative, as it can be decomposed and digested by chymotrypsin in the digestive tract after entering human body. It can effectively inhibit the growth and reproduction of Gram-positive bacteria, especially has a strong inhibitory effect on heat-resistant Bacillus, Clostridium botulinum, Listeria monocytogenes and the resulting spores. So the nisin can be used for the preservation in meat, dairy, vegetable protein foods, canned foods, etc.
Nisin makes a revolutionary breakthrough to the preservation of the food industry, and solves the problem of short-term low temperature sterilization of food, reduces sterilization temperature, shortened the sterilization time, improves the quality of food, and extends the storage time, and fundamentally improves the taste of food.

Instructions
three methods of nisin use
(1) Because nisin dissolves completely under low pH conditions, it is recommended to use acidic medium for food, cold boiled water (or distilled water) to make a 5% aqueous suspension (pH about 3-4), and then add it to the food according to the amount. Mix and use;
(2) Nisin can be mixed with other raw materials according to process requirements, and then dissolved and used;
(3) Nisin can be dissolved in a small amount of juice or soup from the original food, and then added to the food according to the amount and mixed thoroughly for use;
The above methods can be selected according to actual conditions. Nisin can also be used in combination with other preservatives.
